Why sauce is so important? Marination is an act not a chore!

Barbecue Sauce is nothing but a liquid flavoring sauce or condiment which may be thick or watery. As the name implies, it has been created to accompany barbecued foods. Traditionally it has been a favored sauce for ribs and chicken. In some occasions, it may be used for dipping items like fries, and sometimes replaces tomato sauce in barbecue-style pizzas. Barbecue Sauce enhances the flavor of any kind of meat, whether barbecued on an open grill outdoors or cooked in the oven. It can also be used in all kinds of recipes or as a condiment for burgers and sandwiches.

Barbecue Sauces may contain sour, sweet, or spicy ingredients or be of a particular flavor
alone. The ingredients may vary, but some items like tomato paste, vinegar, spices, and
sweeteners are common. These variations are often due to regional traditions and recipes.

A good barbecue sauce can serve a host of functions in the kitchen. Different geographical areas have their particular style of preparing Barbecue Sauces and the taste varies accordingly. Making barbecue sauces are quite simple though some may take a long time to prepare. A quick and simple sauce can be made by combining primary flavors with some dipping and basting. There are also other recipes that take a lot of time and produce a complex layering of flavors. The flavors may be complex, but it is not necessary for the procedure to be complex.

Barbecue smokers even become most perfect for camping where you get an abundant
supply of wood to get it going and a perfect producer of smoke. The smoky taste and

How to make a skewer of great meat !

Thinking of what do have for your BBQ session? Skewers of meat but do not know if what you do is correct? Maybe we can give you a quick guidance? 

If you intend to use bamboo skewers, please soak them in water for about 30mins before using them. 

Select meat with fats is essential like beef slabs, lamb shoulder, chicken thighs, etc. Point to note is to ensure that meat are sliced thinly and not in huge pieces. This will allow the meat to be cooked throughly within minutes. 

To choose the right type of vegetables are important as it will enhance the flavours of the skews. Don't select items such as carrot which will take a long time to soften as this might cause the meat to be overcooked as well. 

Sauce and flavours are purely recipe driven as we will not go in depth but remember to choose the right sauce. Too heavy a taste will cause the skewer to swing straight into the bin hence watch the selection.

How long to marinate your bbq food??

Most of the time we will choose the easy way out which is to purchase the food items on the same day and get all the seasoning, sauces and marination together with the required meat items.

We will then race against time to try and get the marination into those frozen or chilled meat that we just purchase an hr ago! With fingers crossed that it will turn out well enough to serve our guest.

Hmmm!! It's actually possible!

According to marination 101, marination is enough so long as you have given 2hrs settling time however poultry might need to take up to 48hrs in a refrigerator.

It is normally recommended to portion up the meat in order for the marination essence to be captured within the shortest period of time. After marination, you can pierce them through the skewers for better and easier handling when you placed it over the grill.






There are some important tips which we would like to share as well :

Do marinate the meats in the refrigerator instead of at room temperature. 

Do marinate the meats in a re-sealable plastic bags rather than containers. 

Do marinate the meat overnight if possible, to ensure the marination is absorbed. 

Don't use marinade from raw meat as a sauce as it contains bacteria from the raw meat. 

Don't use leftover marinade for other food. 

Teriyaki sauce, black pepper, cajun, etc are the common marination we will always come across.

Sides that help to keep your guest who are early birds busy munching!

Definitely there will be early birds in your group of gathering and as a host or organiser, you want to make sure they are also rewarded for their timeliness attitude!

Of course the simplest method is to offer them a bottle of beer or even a glass of cold drinks to keep the heat down when you are starting the fire..













It had become too cliche now hence here are some suggestions that we would like to introduce you to:

1. Edamame Beans

To cook: Put them in a saucepan of boiling water for only a few mins, then drained away the water before seasoning them with salt.

This side definitely goes well with your beer!








2.  Tortilla Chips with sauces of your choice or liking

So while you are shopping for your food, remember to just grab a bag or two of these tasty tortilla chips.

It goes well with melted cheese, tomato, salsa or any type of sauce you can buy over the counter so that they can enjoying dipping and again drinking!












3. A bowl of mixed nuts


To maintain a healthy dietary, nuts are also an important element of food source. The most important is hassle free as you can purchase mixed nuts (unsalted of course!) over the counter and open it right away to serve your guests.

Important to get mixed nuts as there is at least a variety for your guest to choose from!






4. Fruits


Yes this is as simple as you might have forgotten! Buy some fruits, chilled it and cut it about 30mins before your event to ensure the freshness and keep these bacteria away from cut fruits.

Fruits are solution to thirst quencher! It helps to improve digestion as well.





5. Steamed corns



Steamed corn is the way to bring out the sweetness and juiciness of the corn. It is also a great way to keep your teeth strong and healthy by taking the entire corn and start eating like a squirrel or chipmunk!

Know how to start a fire??

Recently when we send the food items to our customers, many a time, customer will ask if we can help with the setup of the fire.

As much as we would like to extend our help, we are always confine with the constraint of time.

Hence we have decided to post a video that we come across over Youtube.

We feel that this is a simple but yet suitable illustration of how it can be done to setup a base fire for the grill.


The white substance you saw in the video is believe to be a solid fuel hence it can be replaced with the fire starter that is part of the package menu.
